Celiac Disease: Permitted Foods and Forbidden Foods
- Allowed ( gluten free );
- At risk;
- Prohibited or prohibited (with gluten ).
Among the “at risk” foods there are some products that may be gluten-free, therefore suitable for coeliacs, but which may also have an unknown botanical origin or be “at risk of contamination in the various stages of production”. In this regard, we recommend the GLUTEN-FREE COMMERCIAL PRODUCTS HANDBOOK drawn up by the Italian Celiac Association.
